KNOW-HOW COMBINED WITH MODERN WINEMAKING

We associate a three-century-old family know-how, guaranteeing a continuous farming of Domaine La Croix Belle vineyard, with modern winemaking methods in the winery, which allows us to constantly improve the quality of our wine. This subtle alchemy gives birth to wines of character and true originality.

The winery : Adapted a couple of times and thermo-regulated, with the last addition being a new winery facility to vinify each grape varietals separately, field by field.

Vats : Composed of a large variety of vats in terms of size and structure: stainless steel vats, concrete, wood, etc., and a set of old and new French oak barrels.

Harvest : Partly mechanical, but always hand picked for our premium cuvées.

Vinification : The harvest is destemmed, grapes are selected, pigeage and traditional remontage are performed for the red wines, temperature control and ageing on lees for the white wines. Pneumatic presses are used for good extraction and gentle handling of the vintage.

Maturing methods : A big part of our wines are aged in vats. The whites are aged on lees. The reds are aged from 6 to 18 months. The "N°7 white" cuvée is vinified and aged in new French oak barrels. The following year, these barrels are used to age the two red cuvées "Calades" and "N°7", for 12 months. For a better exchange between wood and wine, these barrels are regularly changed every four wines.

Bottling : We bottle our wines ourselves in the winery using our own machines. Lightly filtered.

Handling : The bottles that are stored are then labeled and put in cases to be ready for shipment, on demand.
