La Soulenque

VARIETIES:
Blend of Muscat Petit Grain and Sauvignon
YIELD:
4 to 8 hectolitres per hectare.
VINIFICATION:
Hand picking in mid October
Dried grapes by over maturation
Direct pressing of the grapes. The juice is slightly settled before a transfer in new oak barrels for fermentation that stopped on its own two month later.
MATURING:
Aged in oak for 5 month after a light sulphiting. Racking of the wine and bottling a month later before the summer heat.
TASTING NOTES:
Golden yellow color
Very powerful and complex nose with lots of aromas in armony such as dry fruits, skin of orange, apricot, figue, honey and white flower.
Very well ballanced in the mouth with both sweetness and freshness.
SERVING SUGGESTION:
To be served at 12 or 13°C, on its own as an aperitif or with leaver pâté (Foie Gras), a dark chocolate desert and a fruit salad.
