Gamme : The "Champs"

The “Champ des Lys” (“Lilies Field”) is the name for a plot of lands with a great many wild irises, also commonly called “lilies” here. A cuvee 100% Grenache Blanc to start with, developed with a blend of Viognier, Grenache Blanc and Chardonnay enlivened with a touch of Sauvignon, delightful for its rich aromas.

PGI Côtes de Thongue
SOIL:
Clayish-calcareous
SUBSOIL:
Gravelly soil and pebbles
YIELD:
45 hectolitres per hectare
AGE OF VINES:
20 years
CULTURE:
Rigorous pruning, natural grassing
YIELD:
Bunch thinning if necessary, sorted harvests.
VINIFICATION:
Traditional, at low temperature. 5% of the blend comes from vinification in oak casks to make it rich and complex.
AGING:
6 months in tanks, on lees with stirring.
DESCRIPTION:
Golden yellow with brilliant tints. Wonderfully complex aromas on the nose with notes of confited lemon. A ripe, fleshy wine; long and spicy finish on the palate.
FOOD AND WINE COMBINATIONS:
Serve between 12-13°C. An elegant wine that can be served for the aperitif; also goes well with grilled fish (sea perch, sea bass, etc.) or fish in sauce (monkfish, salmon, etc.); just as beautifully as with scallops or white meats, and - why not? - goat cheeses.
