Gamme : The "N°7"

Cuvee “N°7” is named for the number of grape varieties used in the blend, which is made only one month before bottling. It has a unique and surprising profile, its quality making it our best ambassador at the greatest tables of France, Europe and the United States.
GRAPE VARIETIES:
Blend of Syrah, Mourvèdre, Cabernet-Sauvignon, Grenache, Merlot, Carignan and Cinsault
APPELLATION:
PGI Côtes de Thongue
SOIL:
Clayish-calcareous
SUBSOIL:
Gravelly soil and pebbles
YIELD:
55 hectolitres per hectare
AGE OF VINES:
20 years
CULTURE:
Rigorous pruning, natural grassing
YIELD:
Bunch thinning if necessary, sorted harvests.
VINIFICATION:
Long maceration of each grape variety, in open tanks.
AGING:
Each plot of land and each grape variety is handled separately for aging for 12 months in new oak casks and 1 to 2 wines.
DESCRIPTION:
Crimson purple, with deep, brilliant colour. Complex on the nose with aromas of black fruits, coffee and mocha, set off with spices (black pepper). Rich and velvety on the palate, a modern wine with smoky notes.
FOOD AND WINE COMBINATIONS:
Serve with authentic regional cuisine, duck breast, game roasted on a spit but also with roast lamb or a nice, large cut of meat.
IDEAL TEMPERATURE:
16°C to 18°C Decant 1 to 2 hours before serving. Aging potential: 8 to 10 years
