LA SOULENQUE

Gamme : The "Hors Catalogue"

The grapes, dried on the vine, are harvested by the entire La Croix Belle team in the morning, generally in early October; the end of the harvest is then celebrated at table. This meal is called “Soulenque” in Occitan. Hence the name of this naturally sweet wine.

25 hectolitres per hectare

CULTURE:
Rigorous pruning, natural grassing

Manual harvesting in autumn
VINIFICATION:
Direct pressing with light clarification carried out. Fermentation takes place in new oak casks. The process completes itself 2 months later.
AGING:
Maturation on fine lees for 12 months. Racking and bottling one month later, just before summer.
DESCRIPTION:
Golden yellow. Powerful and superbly complex on the nose, with a harmonious combination of notes of dried nuts, orange peel, apricot, fig, honey and white flowers. Both smooth and refreshing on the palate, thanks to its quite wonderful balance
FOOD AND WINE COMBINATIONS:
Served chilled, for the aperitif, with foie gras, with pear and almond dessert or a fresh fruit gratin.
