The term “Calades” means “stone path” and takes its name from a plot of land at the Estate.
GRAPE VARIETIES:
Cabernet Sauvignon (60%) and Syrah (40%)

PGI Côtes de Thongue
SOIL:
Clayish-calcareous
SUBSOIL:
Gravelly soil and pebbles
YIELD:
35 hectolitres per hectare
AGE OF VINES:
20 years
CULTURE:
Rigorous pruning, natural grassing
YIELD:
Harvest sorting
VINIFICATION:
Traditional, with long maceration in concrete tanks.
AGING:
12 months in casks of French oak. Each grape variety is aged separately with its own type of warming.
DESCRIPTION:
Deep red with ruby tints. Rich and roasted on the nose. Notes of grilled green pepper, red fruits and ripe fruits. A wine of character, structured, a great classic, superbly refreshing (minty notes), pleasantly powerful on the palate. Finish long and rounded on the palate.
FOOD AND WINE COMBINATIONS:
Serve at about 16°C, with fillet of duck breast or another red meat. Good for winter dishes, this wine will also surprise you as well with soft cheeses or Basque ewe-milk cheeses.
AGING POTENTIAL:
6 to 8 years
